During the SHA meeting in Corpus Christi a few years ago, a presentation on the Californian bread ovens was part of a session on using oral history and story telling within the confines of archeological investigations. [ I apologize if that is a misrepresentation.]  Some of the talks were about tenement blocks in the northeast, but this and a report on Basque(?) rancherias in California were given.  There is a video showing the design of the farmstead ovens and breadmaking, with commentary from the settlers' descendants.
