I am not familiar with the large orchestral recordings but to my ears, one
of the best Zappa albums is The Yellow Shark, which was recorded by the
Ensemble Modern with Zappa's involvement.

Needless to say, Zappa is not for everyone.  (Frankly, much of his work is
just too nasty for my taste.) Nevertheless, The Yellow Shark is a strong
piece of work and very well recorded.
