I think the all-time overdubbing champ in my experience is an old album
called "Lloyd Elliot and his Trombone, Trombone, Trombone, ...." Mr.
Elliot apparently played all ten trombone tracks, quite well in synch
with himself (IIRC), yet sonically pale and ill-matched. A good album of
Yiddish songs called "Grandma Soup" features a lady named Miriam Dvorin
singing and playing all the instruments. With the spontaneity of a live
band (even in a recording-studio setting) it could have been a great one.
