This thread should have been started by someone who only knows three works.
My three, and this isn't easy:

Mozart's Great Mass - Schubert's piano sonata D 959 - Bach's Mass in B
Minor.

That just leaves many hundreds of masterpieces I can't do without.

Another list member suggested "bodies" of works.  My three are:

Mozart Piano Concertos - Bach cantatas - Beethoven piano sonatas.
