From what I've read once you store in PDB, it is not for human consumption
anymore.  This year I extracted my uncapped after I had finished all my
capped.  I kept capped seperate from uncapped.  In a few months I will
check the uncapped to see if it has fermented.  If not then it will be
sellable.
