It sounds like he experienced the wonder of carbonation from the
process of fermentation. If the high moisture honey was held in a sealed jar
that is what happen. He was lucky ,the jar did not explode before he opened
it. The foaming is from the release of CO2 at atmospheric pressure. I
imagine the honey would taste bad, if not you may get a buzz from consuming
it, no pun intended.
