Although later than your query -- mid-19th century -- there is an excellent detailed look at slave labor in the iron industry (Virginia, USA) by historian Charles Dew:
 
_Bond of Iron: Master and Slave at Buffalo Forge_ (1994) New York: Norton.
 
Dew had a remarkably complete collection of economic data and narratives from which he crafted his volume.
