I am a novice beekeeper. I extracted my first batch of honey this
summer. People I have given the honey to have raved about how wonderful it
tastes (beyond the mere polite level). I assumed it was because the hives
are located in a wonderful spot with a grove of honey locus trees, old apple
trees and other yummy sources. But this batch of honey also sat in the
hives over 2 winters (I am embarressed to say). Did this aging do anything
to improve the quality of the flavor?
