I am a bit surprised that only one person responded to the query on
historical gardens. There is actually quite a bit of literature on the
subject--and even more on cultural landscapes in general.

For starters, try Leone's work and the work of Elizabeth Kryder-Reid--I
am not sure what she has published, but her (recent) dissertation
addressed an 18th century garden in Annapolis, Md.

Leone, Mark P.
1988 The Relationship Between Archaeological
Data and the Documentary Record: 18th Century
Gardens in Annapolis, Maryland. Historical
Archaeology 22(1):7-12.
