The following publication may be one that you are looking for:

Sander Ernst van der Leeuw, Studies in the Technology of Ancient Pottery,
Huisdrukkerij Universitejt van Amsterdam, 1976.

van der Leeuw's study concerns the medieval pottery from Haarlem, the
Netherlands; a medieval Syrian Village on the Euphrates River and Neolithic
Beakers from the Netherlands. I believe that the study on form and function
of wheel-thrown, medieval pottery was the outgrowth of the Pottery Technology
Project of the Institute for Palestinian Archaeology at Leiden State
University.
