There has recently been a case here in Western Canada where a
beekeeper bought a *off spec* load of corn syrup for fall feed.
It was sold at a discount as off-spec and an analysis supplied,
apparently. One of the factors that was off-spec was that the HMF
was high.
This spring there are abnormal losses in that outfit.
HMF is apparently high in acid process corn syrup, and it is also --
as I recall -- a product of heat and age in honey.
My question:
Will heating sugar syrup (sucrose in water) cause high HMF, or is
this only a factor in honey and invert sugars?
