I am a bit surprised that only one person responded to the query on
historical gardens. There is actually quite a bit of literature on the
subject--and even more on cultural landscapes in general.
For starters, try Leone's work and the work of Elizabeth Kryder-Reid--I
am not sure what she has published, but her (recent) dissertation
addressed an 18th century garden in Annapolis, Md.
