The Univeristy of Florida in Gainesville has a graduate program in
archaeology that includes Dr, Kathleen Deagan as part of its staff.  She
is an excellent historical archaeologist and has several students working
with her (Spanish colonial sites).  While the program is not structured
around historical archaeology, a lot of it goes on there.  Also mission
excavations (also Dr. Jerald Milanich) around north Florida.  May be a
good place to check into.
