I've not had the problem of storing that much honey yet, but if you use
an apple-juice barrel, I'd certainly think you'd want to let it stand
overnight with a dilute hypochlorite solution (e.g. Chlorox(tm) bleach) to
get rid of the apple odor, then rinse it thoroughly. That should render it
suitable for honey storage.
