As far as 3D documentation goes--I don't know where you have been, but
archaeologists ARE using it.  Most who can afford (or get access to) a
laser transit are doing so... Beyond that, all archaeological data is
recorded in 3D already.  So anyone who puts their data on a computer
maping system could be said to be doing 3D imaging.  What most of us are
not doing is having little pictures of every single item on our maps,
which is what you seem to be talking about.
