The honey I sell is extracted at room temperature, placed in a settling tank, and then put in jars. I think the terms raw and unfiltered correctly describe the product.
If honey is heated at or above 140F it is cooked. Filtering is more ambiguous but I am sure we could argue what mesh constitutes a filter and what is a strainer.
