I wonder how much of the syrup/ fondant ends up in jars and labelled as honey? Back in WW2 there was sugar rationing in the UK but beekeepers were allocated sugar for feeding their bees. To prevent it being sold it was coloured with a green food dye. There was soon quite a bit of green honey for sale!
Maybe dying sugar for bee feeding should be resumed to ensure that what we sell is entirely genuine honey.
