I think that there may be no difference chemically but I have deffinitely found a difference in the making of fondant.  Most of the sugarI use purchased from Walmart boil at a certain temperature and foam in a certain way.  Every now and again I will get cheap sugar from Foodtiger and it would behave differently to the sugar from walmart and sometimes I have to raise the end temperature on some to be able to finish with a mouldable block.  Some of you may ask why fondant instaed of sugar blocks, well I put a sugar brick and a fondant brick on a feeding shim and take a look the next day to find the fondant full of bees and nothing on the sugar block.  So I will give my bees what they want.
