Why vinegar?
I buy fondant once a year and always get more than I need; keeps the price
down and gives me spare for emergency feeding in the spring if there are
problems with the weather. Any surplus is then used first in the following
autumn. Never a problem keeping it, even when I manage to buy a job lot
that is short-dated.
