Last year with DARG (Devon Apicultural Research Group)  we had several sessions playing with pollen and microscopes with samples from honey or direct from plants.  The results were very variable and often didn't match pictures in books.  If the pollen grain is at a different angle to the one in the picture it can look quite different.
