I have no clue why maples would produce nectar. But, nothing else is blooming when soft maples start in late Feb or early March other than a few ornamentals my wife grows such as heathers and winter aconite. I do see evidence many years of small amounts of nectar coming in. I have also seen honey bees working on broken twigs or limbs that are leaking sap. Soft maple sap is only about 1% sugar so I can not think they could get much good from it other than the water content. Perhaps also some native insects pollinate them? Not many natives out that early.
