I concur with Pete's assessment. There may be some nutritional benefit due
to metabolic products during the initial aerobic fermentation (roughly the
first 24 hours), but that has yet to be documented. After that, not much
appears to occur biochemically, other than slow degradation of nutrients
(you can easily confirm that bees discard aged beebread).
