I disagree. Experienced beekeepers operating in the same locations for years and managing for varietal flows learn with a high degree of certainty the predominate floral source of honey both by taste and appearance. If I taste clover and do as Dave did and someone tells me it is canola by pollen analysis I say they have to find a better analysis. There are few easier honey's to identify by taste then pure clover. As is often the case when there is a mix of floral sources and the honey must be identified as wild flower or seasonal again pollen identification will be of little use except to say that there are a variety of pollen's present. If no pollen is present then suspicion should be raised.
