Trevor, This is true. Some (?) are not familiar with the Codex Alimentarius. Meanwhile I had one guy fed the bees sugar syrup till 1- 2 weeks before the honey flow. Sucrose was above 5%. He claimed that was alfalfa honey. Testing using C4 showed that he was wrong. The good thing we have an excellent Food safety chemistry lab in Alberta Agriculture. They do a good job and the staff always communicates their questionable findings with me. Thus, we were able to investigate and address these issues right on time before causing any troubles to our quality honey . I believe that each beekeeper should read and keep a copy of Codex Alimentarius as a reference for honey standards and accredited testing procedures.
