We are perhaps 'lucky' that the UK is a relatively small country which might make it easier to identify pollens.
Our classic book is 'The Pollen Loads of the Honey Bee' by Dorothy Hodges - one of those nice books to own, with beautiful drawings and accurate colour keys.
A more recent book is that by Rex Sawyer, 'Pollen Identification for Beekeepers', which comes with a set of punched cards for various characteristics which you overlay on each other to narrow down the possibilities. There is a CD available to accompany it.
But coming back to the original question, I think that the BBKA syllabus is designed to give keen amateur beekeepers some skills in identifying the source of their honey - not to become world experts on detecting potentially fraudulent mis-selling of honey from anywhere around the globe!
