So many unique and intriguing honeys!
Mallee, West Australia--like molten butter and caramel
Leatherwood, Tasmania--complex, sit down for 10 minutes to enjoy the taste
changes from a single spoonful
Yellow Star Thistle, California--has been a while, but I remember it as one
of the finest.
Citrus--the aroma.
And I like good old Sweet Clover, or a nice alfalfa for it's intense flavor
burst
And across the U.S. and around the world, there are so many other varietals
that I like.
