>I have about 5 boxes of pollen sub (Mann Lake bulk) left over from last January.  It has been wrapped in the original plastic and kept inside unheated garage.  It looks, smells, tastes ok to me.  What do you guys think about its value for the bees?

I wouldn't use it. I just threw out a couple boxes just a little older than those.
