I pour the extracted honey into a SS tank to allow the debris(wax
etc) to rise to the top. When the honey is bottled later the
moisture is checked every so often. The first honey (bottom) is
always the lowest moisture, while the last (top ) is the highest, with
intermediate checks ranging between the two. Most significant
readings, from one tank, noted this year 13.2% -17-2%. If as you
are bottling, the moisture level rises to the danger level, STOP. Use
the remaining honey in the tank for mead, beer, or sell it as cooking
honey needing to be used quickly & refrigerated.
