I've had the same problems - few willing to insure beekeeping operations, and the few that are available were not much interested in our small contract research company that works in other states and even overseas.I also had to deal with landlords, landowners, and contract sponsors who insisted on a specific monetary insurance level.My only solution may be unique to my state, but I had to go to the Montana State Fund for insurance.  They aren't the cheapest, but they didn't put up the road blocks I ran into by most other insurance companies.  I do have one other option that most do not have- I have a Contract Research/Technology Transfer company that is Montana University System (MUS) approved and that is affiliated with the Univ of MT.  I and my main research partner have positions on UM faculty - I'm part time, he's still full time.  As such, MUS provides coverage for University related activities - mostly self-funded.
