In this study, they found no nutritional difference between stored and fresh pollen. The only difference was the absence of starch in the bee-bread.
Also, my observation is that not all pollen is stored the same. I find some stored deeper in the cell and coated with a thin layer of honey which makes it look shiny. Other stored pollen doesn't seem to get that far and is packed in but exposed. Not sure what the difference is but I've always assumed the shiny pollen was better preserved.
