Matt,
I have a reference to a horse burial from a pre-Civil War town site in
northern Illinois, if you are interested, and some excellent excavation
photos potentially available. I think it is exactly what you would expect
-- a horse in a hole -- but nevertheless, a fairly major expenditure of
effort was involved.
