I've been waiting for someone to point out that Eva Crane's book on HONEY covers all of this and much more. She has extensive Tables that clearly show that the quantify of nectar produced and the quality of the nectar in terms of sugar content vary greatly by plant species. I use her Tables in our Journeyman beekeeping course - and not unexpectantly, plants generally either produce LOTS of low sugar content nectar or small amounts of high sugar content nectar, but usually not both.
