The Archaeology of Institutional Confinement by Eleanor Conlin Casella
(2007) might be a great place to start.

Subject: archaeology and prison companies

I am working with a site that was owned by one of Georgia's prison
companies from roughly 1875 to 1885. It was a cotton plantation and
factory. I am curious if anyone knows of any archaeological work that
made have been carried out at such sites that I could use for
comparative purposes, especially in the South in the late nineteenth
century.
