The difficulty with this one is not letting people drop their hands when grabbing...I learned to have the grabbers put the arm that grabs on a table so they couldn't try to follow the dollar downwards.

Yes, this is excellent.  It was a betting game I learned as a kid.  
People can't believe they can't catch it and insist on trying again and 
again.  I learned it that if they caught the dollar they got to keep it, 
but if they missed they had to pay a quarter.  Consistently profitable.

I believe we made it more "challenging" by making the other person keep 
their fingers nearer the middle of the bill instead of the end, like 
over the pyramid - but we just kept it flat....
