It's possible to see bits and pieces of meat flying off in the footage.  My understanding is that most birds of prey only work when they are hungry, and that carefully monitoring and controlling their weight is the key to performance.  Maybe others can add more.  All the footage of the goshawk in action is absolutely spectacular.  I had no idea of their flying capabilities.
