The bees don't always cap honey in the fall and if you remove supers
early in the day during dry fall weather the moisture content should be
ok.
Just to be sure you could extract a few frames and check the moisture
content. If it is too high you could feed that little bit back to
the bees. I always find that my uncapped comb honey is dried out
quite a bit when left in the honey house over the winter. Or you
also could store supers of those slightly, high-moisture honey combs
it in a cool dry (air conditioned or naturally cool) vented room until
the moisture content is reduced to an acceptable level.
