I am not in academic archaeology, but the book I go to when teaching new field and lab technicians at work about the field is Russell J. Barber's "Doing Historical Archaeology: Exercises Using Documentary, Oral, and Material Evidence." It really does a great job of presenting all the different things a historical archaeologist may be called on to do with practical exercises for the student to do on each topic.
