This sounds like a cool project. Two things came to mind:
1. Years ago I looked into projectors for something similar. That is to say it was supposed to project straight up. Back then the problem was going to be that the projectors were not designed to be mounted pointing up or down. The heat sinks and fans needed to be horizontal. Bulb ($$$!) life would have been greatly reduced. Of course projectors have evolved so much from then that this might not be an issue at all now.
2. Lasers can punch through high ambient light levels and they (laser video projectors) are coming down in price everyday.
