Before I moved to feeding bakers' fondant I used to mix sugar syrup with an
old Hoover single tub washing machine - the one with the circular agitator
in the back wall. It held around 9 gallons, so I was able to put in water,
then add a 1/2 cwt bag of sugar and turn on immediately. No need to use hot
water - that costs! 15 minutes agitation with cold water produced a cloudy
syrup that quickly cleared.
Important points:
If sugar goes down into the pump it will not dissolve and the impeller will
break when you turn on the pump. I solved this by putting a cork in the
outlet to the pump; it was tied to a piece of string so that I could remove
it easily to pump out the syrup after mixing.
Start the agitation as soon as the sugar is added, otherwise it will setlle
and form a hard mass.
