It is the physics of a supersaturated solution. If you add nuclei, for
example pollen grains or a small amount of finely set honey, to clear honey
then it will set faster. Plenty of articles on the Internet about the
process. I seem to remember using sodium thiosulphate to demonstrate the
process when I was at school. Try 'supersaturated solution crystallization'
in Google.
