A traveling exhibit on microbes from the NY Hall of Science years back included an old refrigerator. I believe there were trays of foods (fruits and such) we replaced periodically in the fridge to allow to mold and decay and show the process over time. I believe a Plexi panel was in front of the food. I do recall the odors when we changed out the ingredients. I could see this done with one working fridge, one case representing storage without refrigeration, and other cases with whatever conditions were desired.
