I add 1 cup of apple cider vinegar to each gallon of syrup.   As I mix 50 gallons of syrup at a time, I end up adding three gallons of vinegar to the barrel.  Close enough for government work.
 
In trying to find my source, I couldn't.  All I can remember is that many of the "apple cider" vinegars at the grocery store are carmel-colored regular vinegar.  I've been doing this so long I can't remember why I was doing it.
