A diffraction grating would work best for capturing a larger beam of light.  You can get it in large plastic sheets from folks like Edmunds.  But if you are using something like a theater spot you will have to be careful about heat.  These new high intensity LED spot lights could be an alternative. 

If you want something very specific you could find a holographer and have a custom designed grating created. Holograms are just extremely complicated* diffraction gratings. It would allow you to design for a very specific set of angles and dispersion. You can also record multiple angles and make something that works better as the sun changes positions.

* Not complicated to make, just complicated in density of information recorded.
