Dr. David Grunwald, Professor Emeritus of the University of Iowa taught such
a program and chaired a session at SHA in York, England where Wondjina
Research Institute (WRI) presented our archaeogeophysical studies of a
Jewish Cemetery at Virginia City, Nevada.  I believe that there have been
other cemetery studies sessions at various SHAs since then.  

If you are serious about teaching new, non-intrusive archaeogeophysical and
archaeochemical techniques for finding and mapping burials, Dr. Claudia
Brackett and I would be glad to give you some references on cemetery studies
using these new technologies (see the National Database for Archaeological
Geophysics (NADAG) website for examples from archaeogeophysics) especially
portable X-Ray Fluorescence (pXRF) for archaeochemical studies of soils and
plants.  WRI and Country Chemist (CC) have grants for the investigation of
the use of pXRF technologies in field archaeology and archaeometry and are
interested in doing non-intrusive studies on cemeteries under these grants
this . 

Best of luck in your research and the course.  If you run across some
interesting papers\presentations dealing with Combined Survey Format (CSF)
archaeogeophysical and archaeochemical studies of cemeteries, Claudia and I
would be very grateful for the references as we are looking to put together
a CD volume on the use of new technologies in archaeology from airbourne
remote sensing to advances in pXRF.  This would fit into my Doctoral
research and would complement our work for the Technology Committee of SHA
and any further work for a future American Chemical Society (ACS)
Archaeochemical Division, that might sponsor a course such as you envision.

Greetings all,

I am currently trying to develop a course in historic cemetery studies, both
from a below ground and above ground perspective. I am curious if there is
anyone on the list that currently teaches or knows of someone who teaches
such a course. I would very much like to see the directions that other
people have taken.
