you should find no problem at all with stitching as long as your source images are taken at the same time, have a good overlap (lots of it really) and it really helps if you use a tripod.
The scenery panorama shows the image breaks very clearly which is a pity but I suspect it is not a disaster given that the source files may have been relatively low resolution. It looks a little as if the clouds moved along between shots.
The house terrace .... hmmm .... I think this was a very difficult subject to make as a stitched image, you were really not able to get far enough away from the subject to give proper depth of field. The solution would be to use a different lens ....
You suggest that you are going to make a jig to hold both frame and camera. Well ... interesting idea. I think you may find it easier to make a jig to hold the frame and buy a tripod though .... You also used the word "lightweight" ... well to me that is not a good word. Solid (and often heavy) go together in the context of this type of photography from my perspective ... but each person has his own approach and I have not issue with that.
