Arvind Gupta's admirable Toys from Trash website should be a great
source of ideas:

Origami is inherently mathematical, and recycled paper is always easy
to come by. I have run origami activities at science museum and
library fairs with a lot of success and I'd be happy to suggest easy
models with STEM themes. If you google Origami Minnesota, I'd bet you
will find paperfolders in the Twin Cities area who'd enjoy a chance
to share their enthusiasm at your festivals.
