One smaller demo we have been using is the Oudin Coil or Oscillator... It demonstrates high frequency electrical currents much like a Testla coil, but I'm a hand held manner... It works great with florescent tubes and can be used in series to light multiple bulbs... Best part is guests act as part of the circuit.... I'm sure it has many other uses, but this our main demo.
