One area of art + science I have not seen much of in museums is Holography.  It is a medium rich in potential for it's serious mix of physics, math, chemistry AND art.  having dabbled in Holography during my NYC years I was always trying to find great uses for holography both in interactive exhibits and as art installation.  The "holographic industry" has had it's issues and did not always make interaction with museums easy but the potential is huge and the old obstacles (cost and installation) are easily overcome.  

And in this I mean true holography, not any of the various 3D tricks and illusions.  No smoke or mirrors please.

If anyone is interested in a discussion about this interesting technology from outside the industry I would love to take part.
