Check out Catherine Holder Spude's The Mascot Saloon: Archaeological Investigations in Skagaway, Alaska Vol. 10. This should give you a good start.

Although it doesn't specifically address saloons by name in the index (and
I don't recall mention, though I wasn't looking for saloons in my
research), this reference traces the development of hotels from early
taverns in the late eighteenth through nineteenth centuries. If nothing
else, it may provide some context and comparison material.
