I don't perform bee sting therapy on others but you may ask your visitors to sign a standard agreement stating their consent to your stinging and releasing you from any liability.
I do this every time I perform a colony removal from someone's premises. I have never been sued but it's for my peace of mind. [Come to think of it, I've never had any complaints, either... I do thoroughly explain the process and the scope of work, prior to starting and answer all and any questions.]
